How On the Dinner Plate started

Most recipes tell you what to put in the pan. Fewer tell you the move that makes the dish work.

On the Dinner Plate started from that gap. Too many "easy" recipes skip the technique — the simmer that keeps a cream sauce from breaking, the sear that builds flavor before the braise, the pasta-water splash that makes sauce cling instead of pool. You follow the steps, and the plate still doesn't taste like the photo.

So the site flipped the order: A recipe can be followed. A technique needs to be learned. Every recipe is built around the technique that actually carries it, filmed and explained so you can see it before you try it at home.

Why technique comes before recipes

A recipe without technique is a shopping list with timing. Technique is what turns the same ingredients into something repeatable.

When you understand the move — not just the ingredients — you can fix a sauce as it starts to split, adjust heat without panic, and cook the next dish with confidence instead of hope. That is the point of On the Dinner Plate: fewer fragile instructions, more durable skill.

Recipes here are still ready for tonight. They are just honest about what makes them work.

Learning to cook isn't memorizing recipes — it's learning the move that makes each dish work, so you can cook with judgment instead of hope. Once you understand the technique, the recipe becomes something you can trust, adjust, and repeat.

Kassondra Peters

Kassondra is my fiancée and my cooking partner. We develop recipes together in the kitchen, testing and refining dishes until they're ready to share. She brings creativity and instinct to our cooking, while I focus on technique. When we're not building new recipes, we enjoy cooking for two — intimate dinners that prove you don't need a crowd to make cooking fun. Many of the recipes you see here started as experiments in our kitchen.
