Supreming an Orange

Cut a slice off the top and bottom of the orange so it stands up. Follow the curve with the knife to take off the peel and all the white pith, top to bottom. Hold the fruit over a bowl and cut along both sides of each membrane, so the segment drops out clean. Squeeze the leftover core over the bowl for juice. Supremes go into salads, onto fish, or into a pan sauce at the last second. Grapefruit and blood oranges work the same way.
