Under heat

Toasting drives off surface moisture and browns the crust through the same reaction that browns a seared steak, just at a lower temperature.

Against air

Exposed bread stales as the starch recrystallizes, not primarily from drying out — which is why bread in a sealed bag can still go stale.

In storage

Room temperature in a bag for a few days, then the freezer — the fridge actually speeds up staling.

At the shop

Check the ingredient list, not the color. Brown bread can be dyed; "whole wheat" as the first ingredient is the only real signal.
