Boiled Eggs, Soft to Hard
Lower cold eggs straight into boiling water with a spoon, then turn it down to a steady simmer. Timing for large eggs: six minutes for a runny yolk, seven for jammy, nine for a set but creamy yolk, eleven for fully hard. Move them straight into ice water for five minutes. Starting in boiling water makes them easier to peel than starting cold. Older eggs peel easier too. Peel them under running water, starting at the wide end where the air pocket is.
