Cedar-Plank Grilling

Soak an untreated cedar plank in water for at least an hour so it smolders instead of burning. Put it on the grill over medium heat until it starts to crackle and smoke, about five minutes. Turn it over, lay a salmon fillet skin-side down on the hot side, close the lid and cook 12 to 18 minutes, until the fish flakes. The plank keeps the fish off the grates and adds a mild woody smoke. Keep a spray bottle handy for flare-ups at the edges. Planks can be used two or three times.
