Set the grill up with a hot side and a cooler side. Sear over direct heat, then move the food over to finish without burning. Clean and oil the grates. Leave the meat in one place until it releases on its own. Cook to temperature, not time, and let it rest five minutes before slicing. Charcoal gives more smoke flavor. Gas is easier to control.
