Marinating and Brining

A brine is salt and water. It seasons lean meat and helps it hold onto moisture. A marinade adds acid, oil and aromatics, mostly to the surface. Brine chicken for one to four hours. Marinate fish for under an hour, since acid starts to cook it. Dry everything well before it hits the pan. Never reuse a marinade that held raw meat unless you boil it first.
