Dissolve salt in warmed cider, add cold water and rosemary, cool. Brine turkey 6–8 hours refrigerated.

Pat dry, roll skin-side out and tie every 2 inches. Heat oven to 375°F.

Brown skin side in oil in an ovenproof skillet 4 minutes.

Roast 60–75 minutes until 155°F, brushing with the cider glaze for the last 15 minutes.

Rest 15 minutes, snip strings and slice.
