Mincing Garlic and Herbs
Smash the garlic clove under the flat of the blade and the skin slips off. Slice it, then rock the knife back and forth over the pile until it's fine. A pinch of salt turns it into paste. For soft herbs like parsley and dill, bunch the leaves tight and slice once. Going over them again and again bruises the leaves and turns them black.
