Seasoning and Salting

Salt early when you can. Meat salted an hour ahead, or overnight, browns better and is seasoned all the way through. Taste as you go and adjust at the end, adding salt, acid, then heat in that order. Kosher salt is easier to pinch and harder to overdo than table salt. Salt pasta water and blanching water well, since that's the only chance to season what's inside.
