Steaming
Steam cooks food over boiling water without it ever touching the water, so it holds its shape and doesn't leach flavor. Keep the water below the basket and the lid on. Check vegetables early, since a minute is the difference between tender and soft. Steamed rice and greens are the quiet half of a lot of plates. A plate on a rack in a covered pot does the same job as a steamer.
