Season steaks and sear in very hot oil 1 minute per side and edges. Cool, brush with Dijon.

Cook mushrooms, shallot and thyme in butter 10–12 minutes until a dry paste. Cool.

On plastic wrap, overlap 2 prosciutto slices, spread half the duxelles, set a steak on top and wrap tightly. Chill 20 minutes. Repeat.

Cut pastry in half, wrap each parcel, seal seams underneath and trim. Brush with egg; chill 15 minutes.

Bake at 425°F 20–25 minutes until pastry is deep golden and the center reads 125°F for medium-rare.

Rest 5 minutes before slicing.
