Fenway-style sausage with peppers and onions

The peppers and onions need time to soften and brown before the sausage is done. Cooking them first, then the sausages, keeps both from steaming in a crowded pan.

Heat a grill to medium, or set a large skillet over medium heat.

Toss the peppers and onions with the oil and salt. Grill or cook them, turning, until they are soft and browned at the edges, about 12 minutes. Move them to a bowl.

Grill the sausages, turning, until they are browned and cooked through, 12 to 15 minutes. In a skillet, brown them after the vegetables come out. If the centers are still pink, add a splash of water, cover, and cook 5 minutes more.

Split and toast the rolls. Fill each with a sausage and a pile of peppers and onions.
