Broiling

The broiler is an upside-down grill. Heat comes from above, and it's fierce. Set the rack 10 to 15 cm below it and stay at the oven. Broiling is good for melting cheese, charring peppers and finishing a glaze, and it can burn food in under a minute. Preheat it for five minutes and leave the door how your oven's manual says.
