Roasting Whole Garlic

Cut the top 5 mm off a whole head of garlic so the cloves show. Set it on a square of foil, pour a teaspoon of olive oil over it, add a pinch of salt and wrap it up. Roast at 200°C for 40 to 50 minutes, until the cloves are soft and golden brown. Let it cool a little, then squeeze from the bottom and the cloves slide out. The taste is sweet and mild. Spread it on bread, whisk it into mashed potatoes, or stir it into a pan sauce.
