Pastry-Topped Pies
A pot pie needs a hot oven and a cool filling. If the filling is warm, the butter in the pastry melts before it can puff. Brush the top with beaten egg for color and cut vents so the steam can escape. Bake until the pastry is deep golden all the way across, not just at the edges. The bottom layers take longest to cook.
