Folding Uszka
Uszka, little ears, are tiny dumplings filled with dried mushrooms and onion, served in clear barszcz on Christmas Eve. Roll pierogi dough very thin and cut 4 cm squares. Put a hazelnut-sized ball of filling in the middle, fold the square into a triangle and press the edges shut. Then wrap the two side corners around your fingertip and pinch them together. You want them small enough that five or six fit in a soup bowl. Boil them for two or three minutes after they rise to the top.
