Yeast Dough and Knots
Yeast dough needs warmth and time. Use warm water, not hot. Knead until the dough springs back when you poke it, and let it rise until doubled. Roll it into ropes, tie them into knots, and give them a second short rise before baking. Brush them with garlic butter straight out of the oven. If the kitchen is cold, put the bowl in an oven with only the light on.
