Warming Tortillas

Warm tortillas on a dry pan for about 30 seconds a side, until they puff in spots and smell toasty. Stack them in a towel to keep them soft. For enchiladas, dip corn tortillas briefly in warm sauce or oil first so they roll without cracking. Gas flames char tortillas nicely if you use tongs and keep them moving. Flour tortillas need less heat than corn, and they burn faster.
