Juices must bubble thickly at the center, not just the edge, or the flour hasn't activated and the pie runs.

Heat oven to 400°F with a sheet pan on the bottom rack.

Toss apples with sugar, flour, lemon and cinnamon; mound in the crust.

Rub crumb ingredients into clumps and pack over the apples.

Bake 20 minutes, then lower to 375°F and bake 40 minutes more until juices bubble through; tent with foil if browning fast.

Cool at least 3 hours to set.
