Cream cheese is the body of the dip. Hot sauce and a little ranch keep it from tasting like a plain cheese ball.

    Heat the oven to 375°F.

    Beat the cream cheese with the hot sauce and ranch until smooth. Fold in the chicken, half the cheddar, the mozzarella, and most of the scallions.

    Spread it in a 1-quart baking dish. Top with the rest of the cheddar.

    Bake until bubbling and browned at the edges, 20 to 25 minutes. Rest 5 minutes, scatter the remaining scallion, and serve.

Notes & swaps

  • Rotisserie chicken is the fast path. Leftover roast chicken works the same.
  • This holds on warm in a slow cooker for a couple of hours. Stir once if the edges set.
