Breakfast casserole for a tailgate

An overnight soak lets the bread take up the egg. Bake it straight from the fridge and the center sets instead of puffing and collapsing.

Brown the sausage, breaking it up, and drain the fat.

Spread the bread in a buttered 9-by-13-inch dish. Add the sausage, cheddar, and scallions.

Whisk the eggs, milk, salt, pepper, and mustard. Pour over the bread. Press the bread down so it soaks. Cover and refrigerate at least 1 hour, or overnight.

Heat the oven to 350°F. Bake uncovered until the center is just set and the top is golden, 45 to 55 minutes. Rest 10 minutes.
Notes & swaps
- From the fridge, start checking at 50 minutes. The center should hit 165°F.
- Torn English muffins stand in for the bread if that is what is stale.
