A splash of vodka in the dough keeps pączki from absorbing as much oil.

    Mix milk, yeast, sugar, eggs, butter, vodka, flour, salt and zest; knead 10 minutes until silky. Rise until doubled, 1 1/2 hours.

    Roll 1/2 inch thick, cut 3-inch rounds and rise on floured trays 30 minutes.

  3. 03

    Fry in 350°F oil 2 minutes per side until deep golden with a pale ring around the middle.

  4. 04

    Drain, pipe jam in through the side and roll in sugar.
