Toast dried chiles just until fragrant; scorched chiles make the broth bitter.

Simmer pork, onion, 4 garlic cloves, bay and salt in water 1 1/2 hours, skimming.

Toast chiles in a dry skillet 30 seconds per side, soak in hot water 20 minutes, then blend with 2 garlic cloves, oregano, cumin and 1 cup soaking liquid. Strain.

Remove pork, shred, and return. Stir in chile purée and hominy.

Simmer 30 minutes; season.

Serve with toppings.
