Simmering Meatballs and Rolls in Sauce
Meatballs and cabbage rolls finish cooking in their sauce. Brown the meatballs first, or drop them in raw if you want them softer. Keep the sauce at a low simmer and turn them once. They take on the sauce's flavor, and the sauce takes some back from the meat. Cover the pot partway so the sauce reduces slowly without spitting. Twenty to thirty minutes cooks most meatballs through. Rolls take closer to an hour.
