About this recipe

I only post recipes that I have tried and verified and are good to my taste — all taste may vary.

Score the rind before baking so the honey and heat can reach the cheese instead of pooling on top of an intact skin.

Ingredients

Method

  1. 01

Heat oven to 350°F. Score a shallow cross pattern into the top rind of the Brie — this is what lets the honey and heat reach the cheese instead of pooling on an intact skin.

  2. 02

Set the wheel in a small baking dish or cast-iron pan. Bake until the center yields to gentle pressure, 12-15 minutes.

  3. 03

Drizzle with honey, scatter the walnuts and rosemary on top.

  4. 04

Broil 1-2 minutes to caramelize the honey at the edges — watch closely, it goes from golden to burnt fast.

  5. 05

Serve immediately with crackers, grapes and figs alongside.

Notes & swaps

  • Score the rind before baking so the honey and heat can reach the cheese instead of pooling on top of an intact skin.
  • A cold Brie straight from the fridge needs closer to 15 minutes; let it sit at room temperature 20 minutes first to speed that up.
