About this recipe

Toasted baguette slices topped with diced tomato, crumbled feta, basil and a little balsamic vinegar. Salt the tomatoes first and let them drain so the bread stays crisp. Spoon the topping on at the last minute. A starter you can put together in about 25 minutes.

Tip: Salt the tomatoes and let them sit. The juice drains off, so the toast stays crisp.

Ingredients

Method

  1. 01

Toss the tomatoes with the salt and set them in a strainer for 10 minutes. Discard the juice.

  2. 02

Stir the drained tomatoes with the feta, basil, balsamic vinegar, 1 tbsp olive oil, and pepper.

  3. 03

Heat the oven to 400°F. Brush both sides of the baguette slices with olive oil. Toast on a sheet pan until the edges are golden, about 8 minutes, turning once.

  4. 04

Rub the hot toast with the cut side of the garlic clove.

  5. 05

Spoon the tomato mixture on the toast just before you serve it.

Notes & swaps

  • Assemble at the last minute. The topping makes the bread soft if it sits.
  • No feta? Use torn fresh mozzarella and a pinch more salt.
