Honey burns if it goes into the fryer. The strips are fried plain, then the hot honey is poured on at the table so the crust stays audible.

    Soak the tenders in buttermilk and half the salt for 20 minutes.

    Mix flour, cornstarch, paprika, and the rest of the salt. Heat oil to 350°F.

    Dredge and fry until golden and cooked through, 3 to 4 minutes per side. Drain on a rack.

    Warm the honey, hot sauce, pepper flakes, and vinegar just until loose. Drizzle over the strips, or serve it in a bowl for dipping.

Notes & swaps

  • More pepper flakes make a hotter honey. Taste it before you commit the whole batch.
  • The same honey is good on the totchos.
