Bacon-Wrapped Roast Pheasant with Apples

Game birds are lean — rest breast-side down so juices run into the breast meat.

Heat oven to 400°F. Rub birds with butter, season, tuck thyme in the cavities and drape bacon over the breasts.

Scatter apples and onion in a roasting pan, set birds on top and pour in cider.

Roast 40–45 minutes; remove bacon for the final 10 to crisp it separately and brown the skin.

Rest birds 10 minutes. Set pan over heat, add stock, scrape and boil 3 minutes for a quick gravy.

Carve and serve with the apples, onions, crispy bacon and gravy.
