Heat the ham covered and gently first, and glaze only at the end at high heat so the sugar caramelizes without burning.

  1. 01

Heat oven to 325°F. Set ham cut-side down in a roasting pan with the water and cover tightly with foil.

  2. 02

Bake about 12 minutes per pound, until the center reads 120°F (about 2 hours for 10 lb).

  3. 03

Simmer brown sugar, mustard, juice, honey and cloves 3 minutes until syrupy.

  4. 04

Raise oven to 400°F, uncover the ham and brush generously with glaze.

  5. 05

Bake 15–20 minutes, brushing twice more, until the internal temperature is 140°F and the glaze is bubbling and dark.
