Squeezing the potatoes dry is the step that keeps this from weeping. The cornflake top stays crisp because it goes on with butter, not under the sauce.

Heat the oven to 350°F. Butter a 9-by-13-inch dish.

Squeeze the hash browns in a towel. Stir them with 1/4 cup of the butter, the soup, sour cream, cheddar, onion, salt, and pepper.

Spread the mixture in the dish. Toss the cornflakes with the remaining butter and scatter them on top.

Bake until the center is hot and the top is brown, 45 to 50 minutes. Rest 10 minutes.
Notes & swaps
- This is the dish to carry in a towel-lined cooler. It holds heat well.
- A handful of cooked bacon in the potato mixture is optional and good.
