Herb Roasted Potato Wedges
Published Oct 23, 2026 · Updated Oct 23, 2026
About this recipe
Yellow fingerling potato wedges keep their skin on. Boil the wedges, then fry them in butter and olive oil until golden. Semi-dried Italian herbs, garlic, onion and paprika go in as they fry. Serve with ketchup, ranch, garlic aioli or horseradish dip. A side for four, ready in about 45 minutes.
Tip: Boil the wedges until a fork goes in with ease, but not so soft they break apart. Then fry them in butter and olive oil until the skin and the potato turn golden.
Ingredients
- Wedges
- Garlic aioli (optional)
- Horseradish dip (optional)
- To serve
Method
-
01
Boil the wedges in salted water until fork-tender, about 10-12 min: the fork goes in with ease, but they're not so soft they break apart.
-
02
Take them out, strain them and let them cool a little.
-
03
Put the butter and olive oil into a large frying pan over medium-high heat.
-
04
Add the wedges, then season with salt and pepper first.
-
05
Fry a few minutes until they start getting a little color, then flip them around the pan, back and forth a few times. Fry a little more; they'll start catching the oil.
-
06
Add the semi-dried Italian herbs and keep frying.
-
07
Once the wedges pick up color and get a good fry on the skin and potato, add the granulated garlic, granulated onion and a little paprika. Toss.
-
08
Once they're a good golden color (about 12-15 min of frying in all), add another knob of butter and a little more herbs.
-
09
Cook about 60 seconds more, then plate. Serve with ketchup, ranch dressing, garlic aioli or horseradish dip, though the sauces are up to your own taste.
Notes & swaps
- Stir together while the potatoes boil.
- Fingerlings are smaller, so the wedges make easy finger food. Multicolor fingerlings work too, but this recipe uses yellow.
- Serve with ketchup, ranch dressing, garlic aioli or horseradish dip, though the sauces are up to your own taste.
