The glaze is boiled until it coats a spoon before it meets the wings. That short reduction keeps the skin from going soggy.

    Pat the wings dry and season with salt and pepper.

    Heat oil to 375°F. Fry in batches until deep golden and cooked through, 8 to 10 minutes. Drain on a rack.

    While the wings fry, simmer honey, soy sauce, garlic, vinegar, and sesame oil in a skillet until the bubbles turn slow and the sauce coats a spoon, about 3 minutes. Take it off the heat and stir in the butter.

    Toss the wings in the glaze. Finish with sesame seeds and scallion.

Notes & swaps

  • Roast at 425°F for 45 minutes if you would rather not fry.
  • A pinch of red pepper flakes in the glaze makes these closer to hot honey.
