    Score skin, season and place skin-down in a cold skillet. Cook over medium 10–12 minutes to render fat until crisp.

    Pour off fat (save it). Flip, brush with honey mixed with soy and five-spice, and roast at 400°F 4–6 minutes to 130°F.

    Rest 5 minutes, glazing again.

  4. 04

    Blanch beans 2 minutes, then toss in 1 tbsp duck fat with garlic and orange.

  5. 05

    Slice duck and serve over beans.
