Baking on a rack lets the bacon fat drip away instead of boiling the filling. The pepper needs the full time or the bite stays raw and sharp.

Heat the oven to 400°F. Set a rack over a foil-lined sheet pan.

Mix the cream cheese, cheddar, scallion, and garlic powder.

Fill each jalapeño half. Wrap with a half slice of bacon and set seam down on the rack.

Bake until the bacon is crisp and the peppers are tender, 22 to 25 minutes. Rest 5 minutes before eating.
Notes & swaps
- Wear gloves when you seed the peppers.
- Skip the bacon and bake 18 minutes if you want them meatless. They will not brown as deeply.
