Finely chop mint with the sugar and salt (the sugar helps it break down). Stir in boiling water, then vinegar; let stand 10 minutes.

Season chops and bring to room temperature.

Sear in a very hot oiled skillet 2–3 minutes per side, holding the fat edge on the pan to render it.

Rest 3 minutes and serve with the mint sauce.
