Heat oven to 325°F. Season pork and brown on all sides in oil.

Mix sauerkraut, apples, onion, sugar and caraway in a roasting pan or Dutch oven; set pork on top and add beer.

Cover and roast 3 hours until the pork is fork-tender.

Slice or pull the pork and serve on the sauerkraut.
