    Season chops at least 30 minutes ahead.

    Sear in oil over medium-high 4–5 minutes per side until 140°F; rest on a plate.

    Melt butter, cook onion and apples 7 minutes until golden; add thyme.

  4. 04

    Add cider and mustard, scrape up the fond and simmer 3 minutes.

  5. 05

    Return chops and juices, spoon sauce over and serve.
