Season and brown pork; remove.

Cook onion and fennel 10 minutes, garlic and spices 1 minute, deglaze with wine.

Add tomatoes, broth and pork; cover and braise at 325°F 2 1/2–3 hours.

Shred pork into the sauce and season.

Cook polenta 30–40 minutes on low, finish with butter and Parmesan, and top with ragù.
