A thin, even layer of each ingredient is the whole method. Thick piles leave the bottom layers behind on the first pass of chips.

    Warm the beans with the chili powder just until spreadable.

    Spread the beans in a shallow 8-inch dish. Follow with guacamole, then sour cream, then salsa.

    Finish with cheddar, olives, and scallions.

    Cover and chill at least 30 minutes so the layers set. Serve with chips.

Notes & swaps

  • Drain the salsa or the top layer weeps into the sour cream.
  • Add a layer of seasoned taco meat between the beans and guacamole if you want it heartier.
