    Boil potatoes until tender, drain and mash with butter, milk, half the cheese, yolk and salt to taste.

    Heat oven to 400°F. Brown lamb in a large ovenproof skillet over medium-high 8 minutes; drain all but 1 tbsp fat.

    Add onion and carrot 6 minutes, then garlic and tomato paste 1 minute. Stir in flour, then broth, Worcestershire and thyme. Simmer 8 minutes until thick; add peas and season.

    Spread mash over the filling, rough it up with a fork and sprinkle with remaining cheese.

    Bake 25 minutes, then broil 2 minutes to brown the ridges. Rest 10 minutes.
