    In a large Dutch oven render bacon over medium, 6 minutes. Brown pork in batches in the fat, 8 minutes; remove.

    Brown kiełbasa 4 minutes, then onions 8 minutes. Stir in tomato paste 1 minute and deglaze with wine.

    Add sauerkraut, fresh cabbage, chopped porcini and their strained liquid, prunes, bay, allspice and caraway. Return pork.

    Cover and cook on the lowest heat (or in a 300°F oven) 2 1/2–3 hours, stirring every 30 minutes and adding a splash of water if it catches.

    Stir in marjoram, season with salt and pepper. Cool, refrigerate overnight and reheat; repeat for even deeper flavor.

    Serve with rye bread or boiled potatoes.
