    Heat the oven to 425°F. Pat the chicken very dry and rub it with 1 1/4 tsp of the salt, the paprika, garlic powder, pepper and 1 tbsp oil. Dry skin is what crackles instead of steaming.

    Toss the baby potatoes with the remaining oil and salt on a rimmed sheet pan. Tuck in the rosemary and set the lemon halves cut-side down.

    Nestle the chicken skin-side up on the potatoes.

    Roast 40–45 minutes, until the thickest part reads 160°F and the skin is crisp.

    Rest 5 minutes, until it climbs to 165°F. Squeeze the roasted lemon over the chicken and potatoes and serve.

  • Halve the potatoes so the cut sides brown on the pan. Keep them in a single layer under the chicken.
