Kielbasa and sauerkraut bake

Rinsing the sauerkraut pulls off the brine that would otherwise make the whole pan sharp. The apple and a spoon of mustard put the sweetness back on purpose.

Heat the oven to 375°F. Toss the sauerkraut, potatoes, onion, apple, mustard, caraway, and pepper with the broth.

Spread the mixture in a 9-by-13-inch dish. Nestle the kielbasa on top and brush it with the oil.

Cover and bake 35 minutes. Uncover and bake until the potatoes are tender and the sausage is browned, about 20 minutes more.

Rest 10 minutes. Taste before you salt it. The sausage and kraut may be enough.
Notes & swaps
- This is one of the better travelers. Wrap the hot dish and keep it at 140°F or hotter.
- A spoon of the pan juices over mashed potatoes the next day is the leftover move.
