Ingredients

1/2 cup graham cracker crumbs
2 tbsp melted butter
1/2 cup pumpkin purée
1 egg
3 tbsp maple syrup
1/4 cup evaporated milk or cream
3/4 tsp pumpkin pie spice
1 pinch salt
Whipped cream

Method

Heat oven to 350°F. Press crumbs and butter into two 8-oz ramekins; bake 6 minutes.

Whisk remaining ingredients and pour in.

Bake 22–25 minutes until set with a slight wobble.

Cool, chill 1 hour and top with whipped cream.
