Leftover Turkey and Sweet Potato Hash

Heat oil in a large cast-iron skillet over medium-high. Add sweet potatoes in one layer; cook 10 minutes, turning only occasionally.

Add butter and onion; cook 6 minutes. Add turkey, sage and paprika and press down; cook 5 minutes to crisp.

Make 4 wells, crack in eggs, cover and cook 4 minutes until the whites set.

Serve with cranberry sauce.
