A water bath cooks custards gently so they set silky instead of curdling.

Heat oven to 325°F. Bring cream and milk to a simmer; pour over chocolate and stir smooth.

Whisk yolks, sugar and salt; slowly whisk in the chocolate mixture and vanilla. Strain.

Pour into six ramekins in a baking dish; add hot water halfway up.

Bake 30–35 minutes until set at the edges and jiggly in the center.

Cool, then chill at least 4 hours. Top with whipped cream.
