Method

  1. 01

    Heat oven to 375°F; line a 10x15 pan. Beat yolks with half the sugar until pale; whip whites with the rest to stiff peaks.

    Fold yolks, cocoa, flour and salt into whites. Spread and bake 10–12 minutes.

    Roll warm in a sugared towel and cool.

  4. 04

    Whip filling, unroll, spread and re-roll. Cut a diagonal end piece to make a branch.

  5. 05

    Pour hot cream over chocolate for ganache; cool until spreadable, cover the log and drag a fork for bark. Dust with sugar 'snow.'
