The dough has to be cooked on the stove until it pulls from the pan, or the churro collapses in the oil. A star tip is what makes the ridges that hold the sugar.

    Bring the water, butter, the tablespoon of sugar, and salt to a boil. Dump in the flour and stir hard until the dough is smooth and leaves a film on the pan, about 1 minute.

    Cool 5 minutes. Beat in the eggs one at a time until the dough is glossy and holds a ribbon.

    Heat oil to 360°F. Pipe 5-inch strips with a star tip, snip them into the oil, and fry until deep gold, about 2 minutes per side. Drain.

    Toss at once in the cinnamon sugar.

Notes & swaps

  • No star tip: two spoons will make a round churro. The sugar still sticks.
  • A small cup of the beer cheese is the wrong sauce here. Warm chocolate is the one people expect.
