Crispy Rosemary Roasted Potatoes

Heat oven to 450°F. Boil potatoes in water with 1 tbsp salt and the baking soda 10 minutes until the edges soften.

Drain, return to the pot and shake hard to rough up the surfaces.

Heat fat with garlic and rosemary 3 minutes; strain the fat over the potatoes and toss.

Spread on a sheet pan and roast 45–55 minutes, flipping every 15, until deep golden.

Toss with the crisp garlic and rosemary and remaining salt.
